Arashiyama Kitcho

In Japan each season has different characters of its own, which develops
the sensitivity to feel the transition.
The beauty of nature remains us of our memory and feeling and has been
expressed in traditional Japanese culture such as WAKA(Japanese poem),
tea ceremony, flower arrangement and incense burning. Japanese cooking
is also one of them.
My grandfather said, "With your ingenuity, everything in nature can be a food."
We would like to reflect this idea on cooking and share the beauty with
customers.

About KAISEKI

Kaiseki is enjoyable with sake and is similar to a full-course French dinner; typical dishes are appetizer soups, sashimi (slices of fish), grilled fish, tempura (fried foods), simmered vegetables, savory cup custard, vinegared salad, rice, and dessert.
Kaiseki-ryori uses the fresh ingredients of the season and are cooked in ways that enhance the original taste of the ingredients. Each dish is simply seasoned and presented beautifully in nice dinnerware. Often, things from nature, such as tree leaves and flowers, accompany the dish. Kaiseki-ryori was vegetarian in its origin, but nowadays, the modern Kaiseki meal may include meat and seafood.
